Cancun, Q.R. – Tourists to Cancun and the Riviera Maya have become increasingly interested in the local cuisine.
Mexico is a country rich in its numerous food specialties which has become increasingly requested by international tourist visiting the Mexican Caribbean.
Each region of Mexico has its own special ingredients and cooking methods which give different dishes their uniqueness. However, most of these unique dishes contain the essential ingredients of corn and chilies which has caught the attention of tourists.
The National Chamber of the Restaurant Food Industry explains, “Restaurants specialize in Mexican foods that have taken on a new boom in these tourist destinations. The reason is because the foods are made from pre-Hispanic recipes and are becoming more specialized in national cuisines as well as standard dishes on the menus of entrepreneurs.”
Some of the most requested local dishes include tamales, los panuchos and salbutes – a variety of fried corn tortillas often topped with meat, vegetables and cheese and a Yucatan specialty, la cochinita pibil, which is tender pulled pork in local spices.
“The new chefs have turned to domestic products to create new dishes with Mexican flair. They’re using locally grown organic raw material, something that works very well in the kitchens of Cancun,” said Academy of Gastronomy University Caribbean (Unicab).
Regardless, locally prepared Maya and Yucatan food dishes are in high demand with tourists. Restaurants are gearing up for the next international high season.
